This stuffed stuff recipe is a healthy, high fiber, high protein meal that doesn’t sacrifice on flavor! Simple and to the point. This recipe is delicious also with , chorizo, ground turkey or beef! Enjoy!
1lb Loose sweet or hot italian sausage (chorizo, ground beef or ground turkey also work well)
1, butternut, acorn or 2 delicata squash, cut lengthwise
2 tablespoons olive oil
2 cups kale, chopped
1 clove garlic
Salt and pepper to taste
1 cup mild cheddar cheese or parmesan, grated (optional)
1/2 cup parsley, chopped
Optional additions: pinch of nutmeg & cinnamon or pumpkin pie spice, breadcrumbs, chopped nuts, raisins and or your favorite melting cheese.
Preheat oven to 375 degrees F. Cut squash in half lengthwise. Scoop out seeds from squash and discard (or rinse and roast for a tasty snack).
Drizzle squash with olive oil and sprinkle with a touch of salt and pepper. Place, cut sides up, on a large baking sheet. Roast for 30 minutes.
While the squash is roasting, add 1 teaspoon olive oil to a medium sauté pan over medium heat. Add sausage (or meat of choice), onion and garlic. Cook about 10 minutes or until sausage is browned and onion is tender. Add kale and sauté about 5 minutes until tender. Season with salt and pepper. If you feel you need a little liquid to tenderize the kale, add a splash of water or chicken stock. Remove from heat.
Spoon sausage and kale mixture evenly into squash halves. We suggest grating a liberal amount of cheddar or parmesan cheese on top, or both! Or top with your choice of breadcrumbs, raisins, chopped nuts or your favorite cheese. Bake for 10 minutes or until squash is tender and topping is golden. Sprinkle with chopped parsley and serve warm!
