Portuguese Kale Soup

This hearty soup/stew is perfect for a cold winter night. It’s rich, warming and even mostly healthy! If chorizo is not your thing, Italian sausage or even ground chicken, turkey or pork work well!


1lb chorizo (loose)

1 bunch of kale 

1lb Yukon gold or red potatoes, cut into bite-sized chunks

1 onion, chopped

2 stalks celery, chopped

4 cloves garlic, chopped

2 tablespoons olive oil

14oz can crushed tomatoes or fire-roasted canned tomatoes

32oz chicken stock or water

Salt and pepper to taste

1 teaspoon of smoked paprika, optional

1 teaspoon of vinegar (balsamic or cider)


1. Saute sausage, breaking into chunks in olive oil over medium heat. Let the fat render and the meat brown for about 2 minutes. Next, add onion and celery and cook 3 more minutes. Now add potatoes and garlic. Continue cooking for 3 minutes. 

2. Add can of tomatoes and cook for 5 minutes. Next add chicken stock and optional vinegar/paprika. Cover and cook for 20 minutes. After 20 minutes, add kale, cover and cook for 40 more minutes.

3. After 40 minutes is up, remove the lid and continue cooking for an additional 15 minutes. Taste. If it needs a bit more salt or pepper, add now. Divide into bowls and serve.
