Can't get much easier than this one. Pre-made and pulled bbq pork with a fresh homemade coleslaw and sweet potato buns make this a quick weekday night winner.

14oz of pulled pork in sauce
4 sweet potato buns
For the coleslaw
1 cabbage (savoy or standard) sliced very thin
1 cup of grated carrots
1 tablespoon of sugar
2 tablespoons of vinegar
2 tablespoons of mayonnaise of vegan mayo substitute
salt and pepper to taste
This is a super easy super tasty quick dinnr or lunch. Premade pulled pork makes this a breeze. Everyone will love it.
1. Heat the pulled pork in a sauce pan on low.
2. Slice and toast your buns slightly (optional)
3. Make the coleslaw (can be done ahead of time and kept in fridge.)
Finely chop your cabbage and grate you carrot. Set aside
In a large bowl whisk your sugar, vinegar, salt and pepper until dissolved. Then add your mayo and mix. Finally mix in your cabbage and carrots until well coated.
Taste it. It should be a nice balance of sweet, salt and tang. If it needs a little more of any of the above ingredients to get it just right. Add and stir in.
4. Assemble sandwich - Add pork to buns. Top with coleslaw (or serve coleslaw on the side). Add a pickle if you like. Enjoy!
