Straight easy and to the point! Taco nights are enjoyed by many on all days of the week (not just Tuesdays)! This is the classic ground meat taco of your youth. Nothing fancy here but satisfying and easy for the family. Making homemade salsa adds a tasty fresh treat!
1lb ground turkey, beef, or chicken
4-6 Stacy's 8inch tortillas.
1 tablespoon chili powder or other preferred taco seasoning.
salt and pepper to taste
6oz of guacamole
1 teaspoon of olive oil or other cooking oil
2 cups finely chopped romaine
1 cup finely chopped cilantro
optional: grated cheese, sour cream
For pico de gallo:
1 cup tomatoes, chopped
½ onion, chopped
1 cloves of garlic, minced (optional)
½ Jalapeño chopped (optional)
2 tablespoons lime juice, freshly squeezed
3 tablespoons fresh cilantro, chopped
½ teaspoon salt
¼ teaspoon pepper
Chop your onion and sauté with olive oil for 5 minutes. Add ground turkey and garlic cook until turkey is no longer pink. Add your chili powder or other preferred taco seasoning. Add salt and pepper to taste and set aside.
To make the pico de gallo, chop ingredients finely (or pulse in a food processor, but don't puree). Season generously with salt and pepper and set aside.
In a 350 degree oven warm your tortillas for 2-3 minutes. They should be warm but not crispy at all.
Rinse and chop your cilantro and romaine very thinly.
Assemble your taco with tortilla, meat, top with pico de gallo and guacamole. Garnish with your lettuce and cilantro and any other taco favorites you may enjoy!
