Avocado & Citrus Salad + Roasted Beets

Avocado & Citrus Salad + Roasted Beets

Super tasty salad and healthy too!

This can be a very quick and raw salad if you omit the beets, but we think they add a nice complexity.

A touch of honey and citrus in the dressing really rounds out the flavors!


Ingredients



Salad Ingredients


1 avocado


1 or 2 of any one or combination of navel oranges, blood oranges or grapefruit


.25 lb Asian greens mix


1 lb roasted beets, sliced


 


Dressing Ingredients


2 tablespoons apple cider vinegar


2 tablespoons olive oil


1 teaspoon orange juice, saved when cutting wedges


1 teaspoon honey


 


Optional Dressing Additions


1 teaspoon soy sauce


1 teaspoon sriracha


1 teaspoon toasted seasame oil


 


Optional Salad Toppings


1 tablespoon sliced almonds or sesame seeds (we recommend toasting lightly in a pan on the stovetop, watching carefully so they don't burn)


Grilled chicken breast, shrimp, salmon, cod etc.



Directions



If roasting beets, rinse well and place on pan in oven at 375 degrees F for 45 minutes to 1 hour (or when beets can be easily pierced with a fork).


If adding protein, cook then let cool.


To prepare salad:


Peel citrus, then cut into wedges. Save some of the juice!


Slice avocado.


When beets are cool, peel and slice.


Assemble greens, avocado, citrus and beets in a large bowl.


Whisk all dressing ingredients together, then toss with salad ingredients. 


 


Sprinkle with almonds or sesame seeds and add protein if desired.
